The keel studs were binding in the keel stub. Decided to raise the boat above the keel studs and drill out out the holes a little more where necessary. It was fairly easy to raise/lower the boat with the additional jack stands.
Added some butyl tape to the studs:

Went inside the boat the dry fit the stainless backer plates:

The holes on the aft plate would not line up (plate put on upside down here). It fit fine in the shop! I think the one stud is bending in slightly.
The shop was locked and there wasn't anyone around with the key, so I spent about 3 hours sanding the port side. The sanding is now about 3/4 done.
